Garant is a five-year veteran of the Fairmont brand and has conceptualized a menu focused around locality and seasonality, created to pair perfectly with the restaurant’s extensive beer selection. Originally from British Columbia, Garant discovered his passion for cooking in grade school and went on to graduate with honors from Vancouver Island University with a culinary degree. 

We hope to create an menu where both hotel guests and Chicagoans alike embrace
the restaurant as their own neighborhood gem.
